Cilantro-Lime-Honey Chicken Recipe

I am a fan of making my own concoctions.

I watch practically every and any recipe video I can and I always want to try them out.

Well, this week, I saw two videos and I think in my mind, I mixed them together.

All week I had this idea to make Cilantro Lime Honey Chicken. It sounded amazing to me but when I went to look up the recipe I couldn’t find the video I wanted. Turns out I was mixing two different ideas;

Cilantro-Lime Chicken and Honey-Lime Chicken.

So I went with it anyways because it sounds good and of course I made my own sides that sounded good to me; Rice with Corn and Fajita Peppers with Onion and Tomatoes.

It actually ended up being really good and I definitely recommend it.

So here is my modified recipe:

In a container mix:

1 TBSP Coconut oil

1 TBSP Lime Juice

1 TBSP Honey

2 TBSPs Cilantro

1 TSP Red Pepper Flakes

1 TSP Cumin

1 TSP Salt

1 TSP Garlic

  1. Mix well

  2. Now you’re going to add half the mix onto your chicken. Both the recipes I saw used chicken thighs but I wanted to use the chicken breast I had so I used about a pound. I cut it into pieces.

  3. Then I mixed the sauce in and let it sit for a few minutes.

  4. In the meantime, I started making some Mexican Rice and sauteing the fajita mix (Bell Peppers, Tomato, Onion).

  5. Once the chicken had marinated for about 15 minutes, I started to fry the chicken. I only added a spray of olive oil so the chicken wouldn’t stick. I covered it so that the steam would help and also because the smell of cooking honey was way too strong for me. (I am not the biggest fan of honey!)

  6. Once the chicken was cooked well, I sliced it and served it on top of the Rice and the Veggies.

  7. I added the other half of the mix on top!


Overall the recipe was pretty simple and it tastes great!
